Derrick’s Delicious Alfredo


¾ cup heavy cream

½ cup parmesan cheese, plus more for sprinkling

3 Tablespoons butter

Salt and freshly ground pepper to taste

Pinch of ground nutmeg (optional)

1 teaspoon of fresh flat leaf parsley

Optional: 1 cup of frozen broccoli or peas

9oz of cooked pasta



In a saucepan over medium heat, combine the cream, Parmesan cheese, butter, a pinch of salt and pepper and nutmeg (if using)

Heat, stirring frequently with a wooden spoon until the butter and Parmesan cheese are completely melted. Reduce the heat to low and simmer, stirring occasionally until thickened, about 15 minutes.

While the sauce is simmering, bring a large pot of water to boil over high heat. Add 1 teaspoon of salt and then the pasta (we used tortellini). Reduce the heat to medium-high and gently boil the pasta until tender. If using, add the frozen broccoli or peas to the pasta during the last minute of cooking time.

Finally, drain the pasta in a colander and top with the sauce and stir, turning the pasta gently with the sauce to cover. Sprinkle with more Parmesan cheese and the parsley. Serve hot and enjoy!
