Chef Scott Rackliff from Gringo Grill and Cantina stopped by the studio to show us how to make a Sonoran Burger.
Here is what you need:
½ lbs all beef patty
6 slices of bacon
1 brioche bun
½ oz jalapeno jam
½ oz roasted tomato
1 oz saved onion
2oz black bean puree
6 oz hand cut fries
Start by layering the bacon on a sheet pan. Then top with another sheet pan to keep the bacon flat. This goes in a pre-heated 300 degree oven until crispy.
Next slice and roast the tomatoes in the same 225 degree oven until slightly dried(or buy sundried tomatoes in oil). Season with salt and pepper, start cooking the hand ground all beef patty on the grill. Toast the bun, heat the black bean puree, and slice the onions very thin.
Cook the burger to your desired doneness then assemble The Sonoran Burger.
To do so, take our black bean puree and spread it on our bottom bun then put the burger. Next we add the bacon, tomatoes, and onions. Finish with crème, jalapeno jam on the top bun and put it on the burger.
