TUCSON-- Today executive chef Jesse K. Bright from Social House Kitchen & Pub stopped by the News 4 Tucson studio for brunch.

He made SoHo Banana and Walnut Stuffed French Toast

Here is what you need:

French Toast
• 1 teaspoon ground cinnamon
• 1/4 teaspoon ground nutmeg
• 2 tablespoons sugar
• 4 tablespoons butter
• 4 eggs
• 1/2 cup milk
• 1/2 teaspoon vanilla extract
• 8 slices brioche bread
In a small bowl, combine, cinnamon, nutmeg, and sugar and set aside briefly.
In a 10-inch or 12-inch skillet, melt butter over medium heat. Whisk together cinnamon mixture, eggs, milk, and vanilla and pour into a shallow container such as a pie plate. Dip bread in egg mixture. Fry slices until golden brown, then flip to cook the other side.
Bacon Caramel Sauce
• 1 cup granulated sugar
• 1/4 cup water
• 2 tablespoons light corn syrup
• 1 cup heavy whipping cream
• 2 tablespoons unsalted butter
• 1 teaspoon pure vanilla extract
• 8 slices bacon, cooked until crisp and finely chopped

Combine the sugar, water and corn syrup in a medium-sized saucepan.
Bring the mixture to a boil over medium heat and cook undisturbed (do not stir!) until the sugar begins to turn golden, swirling the pan carefully to allow the sugar to color evenly. Continue cooking until the sauce becomes
a rich amber color with a dark nutty almost burnt smell.

Immediately remove the pan from the heat and add the cream; it will bubble up. Return the sauce to the heat and bring back to a boil. Add the butter, vanilla and the chopped bacon and simmer the sauce for 5 minutes more.
Banana cream filling-
2 large bananas + 2 bananas sliced for cream cheese mixture
4 tablespoons butter
4 tablespoons brown sugar
8 oz. cream cheese, softened
4 tablespoons granulated sugar
1 teaspoon vanilla
1/4 teaspoon cinnamon
Directions:
In a large skillet heat butter and brown sugar over medium-low heat. Slice bananas on the diagonal and place into hot pan. Cook 5 minutes per side or until bananas have caramelized. Remove from heat.
Mix cream cheese, sugar, vanilla, cinnamon and caramelized banana mixture together until combined. Spread an even layer of the cream cheese mixture over each slice of bread. Place bananas in a single layer on one slice and top with another slice of bread to create a sandwich. Repeat until there are 4 sandwiches created.
