TUCSON - Today on News 4 Cooks at Noon, Juan Suazo from Juanitos on Grant stopped by to make Huevos a la Mexicana. Here is the recipe:
Huevos a la Mexicana
2 red tomatoes
2 scoops of chopped white onion
1 jalepeno
4 eggs
Place vegetables in heated pan with 1 tablespoon of vegetable oil Stir to cook, while stirring add pinch of salt Cook to taste Take the 4 eggs, add to vegetables, scramble to taste
Add rice and beans, with some lettuce. Then add slices of avocado with tortillas on the side (either corn or flour- personal preference)
Sour cream is added to the dish after the vegetables are cooked.
