TUCSON - Today on "Let's Make a Meal," on News 4 at 4, our friend Craig Nassar, The Practical Chef, stopped by with another delicious dish. Here's the recipe:
Thai Style Butterfly Jumbo Shrimp
24 each u/15 Shrimp - peeled, deveined and butterflied
1 1/3 cups Coconut Milk
4 each Green Onions
2 inch Piece of Fresh Ginger
2 each Garlic Cloves - minced
2 each Red Chili's
1 each Lime Zest
2 Tbsp. Lime Juice
4 each Cilantro Sprigs
Salt and Pepper to taste
Peel and devein the shrimp.
Place all remaining ingredients in a food processor and puree until smooth.
Pour the mixture over the shrimp, coating them well. Cover and leave to marinate for 30 minutes to 1 hour.
Thread the shrimp onto skewers, then cook over a medium high heat for about 5 minutes, turning once or twice,until firm and opaque. Serve immediately.
Note: Soak your wooden skewers over night in water to prevent them from burning on the grill.
