TUCSON - After a long vacation, News 4 Tucson's food contributor Jennifer English is back!
Today she stopped by with a recipe for "Foolproof Salmon." Here's what she had to say:

"I got this recipe from a marvelous Canadian cook known to all as Grandma Clarisse. She has been living sustainably in British Columbia for over 60 years. The beauty of her food is in the delicious, clean simplicity of it. Her farm girl prairie roots and resourcefulness evolved into a sustainable sensibility that endure to this day. She shared this recipe with me and I now proudly share it with you.

"The secret is in the simplicity and the homemade may which , once you make this, will convince you to give up store made mayonnaise forever.

"Now be prepared to suspend your doubts on this one. I watched this preparation and could not imagine that it could turn out so beautifully and flavorful. Trust me, it does."

Foolproof Salmon Recipe

6 ounce Salmon filet per person
fresh lemon cut in half
1/2 teaspoon homemade mayonnaise per filet
1 teaspoon organic brown sugar per filet

preheat oven to 400 degrees
place filets on parchment covered baking sheet skin side down
squeeze fresh lemon juice over each filet
spread mayonnaise over each filet
sprinkle each filet with brown sugar

place in oven for 7-8 minutes
let rest 2-3 minutes
serve

Foolproof Mayonnaise

Ingredients

• 1 large egg yolk, at room temperature
• 2 teaspoons lemon juice
• 1 teaspoon Dijon mustard
• 1/4 teaspoon kosher salt
• 1 teaspoon cold water
• 3/4 cup neutral oil such as safflower or canola.

Preparation

In a medium bowl, whisk together the egg yolk, lemon juice, mustard, salt and 1 teaspoon cold water until frothy.
Whisking constantly, slowly dribble in the oil until mayonnaise is thick and oil is incorporated.

When the mayonnaise emulsifies and starts to thicken, you can add the oil in a thin stream, instead of drop by drop.
