TUCSON - For Labor Day, it was "Let's Make a Mini-Meal," on News 4 Tucson at 4 p.m. today.
Warren Weekes, the corporate chef for Epicurian Foods stopped by to make Goat Cheese-Stuffed Peppadews. Here's the recipe:
Recipe for Stuffed Peppadews
Goat Cheese Stuffed Peppadews are an ideal item for easy entertaining. They can be made a day in advance. Serve with a good, bold wine.
24 ea. Peppadews
4 oz Goat Cheese, Softened
2 oz Cream Cheese, Softened
2 oz Prosciutto, minced
1 T Chives, minced
1 t Crushed Fresh Garlic
TT Salt and Pepper
Instructions:
Remove Peppadews from liquid and allow to air dry. Mix Goat Cheese, Cream Cheese, Prosciutto, Chives and Garlic. Blend well. Taste filling and add salt and pepper to taste. Take a large zip lock bag and place the filling in the bag. Cut a 1 inch piece from the corner of the bag. This will allow you to easily fill the Peppadews. Store finished peppadews in an airtight container until ready to use. Serve at room temperature.>
