TUCSON - Today on "Let's Make a Meal," the Practical Chef, Craig Nassar, stopped by with another recipe in his repert: Chicken Saltimbocca. Here's how to make it:
Chicken Saltimbocca
4 each 1/2 Boneless Chicken Breast - Slightly pounded
1/8 tsp. Salt
12 each Sage Leafs - fresh
2 ounces Proscuitto Ham - thinly sliced into 8 strips
4 tsp. Extra Virgin Olive Oil
1/3 cup Chicken Broth
1/4 cup Lemon Juice - fresh squeezed
1/2 tsp, Cornstarch
Lemon wedges as garnish
Sprinkle chicken breast with salt. Place 3 sage leaves on each breast; wrap 2 slices of proscuitto around each breast, securing sage leaves in place.
Heat a large skillet over medium heat. Add 1 tablespoon of oil to pan;swirl to coat. Add chicken to pan; cook for 2 minutes on each side or until done. Remove cicken from pan and keep warm.
Combine broth, lemon juice, and cornstarch in a small bowl; stir with a whisk until smooth, Add cornstarch mixture and remaining 1 teaspoon of oil to pan; bring to a boil, stirring constantly. Cook 1 minute or until slightly thickened, stirring constantly with a whisk. Spoon sauce over chicken and angel hair pasta and serve.
