TUCSON - Today on "News 4 Cooks" at noon, Jack Ahern, Chef and Owner at Ric's Café on east River Road, stopped by with a favorite brunch dish. Here's the recipe:
28 OZ Stewed Diced Tomatoes
1 Small Onion
1 Small Red Bell Pepper
1 Small Green Bell Pepper
1 T Ground Cumin
1/2 t Cayenne
1 T Fresh Chopped Garlic
½ T Ground Black Pepper
½ T Sea Salt
1/T Chili Powder
Sautee all vegetables with olive oil, add tomatoes & spices. Bring to a boil, turn heat down to a simmer. Cover for ~30 minutes.
8 Corn Tortillas - lightly dip in warm oil and pat dry.
8 Eggs - To your liking - ie: scrambled, over easy etc.
1/2 - Head of Shredded Lettuce
- Diced Tomatoes
- Black Olives Sliced
- Cheddar Cheese
Place cooked eggs on corn tortillas & top with Ranchero sauce.
Garnish with shredded lettuce, jalapenos, tomatoes, olives & beans.
