TUCSON - Today on News 4 Cooks! at noon, Jack Ahern, the chef and owner of Ric's Cafe on River and Craycroft, stopped by to make crab cakes with garlic aioli. Here's the recipe:
Crab cakes w/ Garlic Aioli
1 16 oz can of crab meat
1 small red bell pepper
1 small green bell pepper
1/2 small red onion
2 whole eggs
1/3 c Mayonnaise
2 T Dijon
3-4 dashed of Tabasco
1 t Old bay Seasoning
1/4 c bread Crumbs
Combine all ingredients in a bowl and mix well. Warm a skillet to med to med-high heat
with Olive oil in the pan. Using a ice cream scoop place 2 scoops in the skillet. Cooking until golden brown on each side and hot through.
Garlic Aoili
1/4 c Mayonnaise
1/2 c Fresh spinach
2-3 cloves of fresh garlic
In a blender combine fresh spinach, garlic and a little water. Puree until smooth. You might have to add a little more water to get the mixture moving.
Stain through a cloth and add a little to the mayonnaise at a time until desired flavor.
Serve with the cakes and lemon wedges
