TUCSON - The owner of Tucson Chuy's restaurants is accused of keeping undocumented workers on the payroll even after he had already been caught, according to an indictment.
Mark Evenson and his son Chris Evenson ran Chuy's restaurants all over the Arizona, hiring about "360 undocumented aliens," according to the indictment.
Chris Evenson was running most of the Chuy's franchises in the Tucson area. In April 2011, he was accused hiring illegal immigrants and filing falsified tax forms.
Most of the undocumented immigrants would "work in the kitchens" and were paid "under the table," according to the indictment.
That allegedly happened between January 2008 and December 2010.
A new indictment shows Chris Evenson continued to put undocumented immigrants to work from April to September 2011.
The franchise owners avoided paying $400,000 in taxes because they paid so many employees off the books, according to the indictment.
The United States is trying to take any property used to commit the crime. That may be anything from real estate to kitchen equipment, according to Mark Evenson's lawyer.
The Chuy's restaurant on 22nd Street and Kolb Road and the franchise in Rita Ranch are not part of the investigation.
