Preparation Instructions:

190g milk

4ea gelatin sheets

360g Dulcey chocolate, melted

387g heavy cream, whipped to soft peak

  1. Soak gelatin in ice water until softened, squeeze out excess water and set aside.
  2. Bring milk to a boil. Stir in gelatin to dissolve then pour over the chocolate and whisk until smooth.
  3. Cool to 86 degrees before folding in whipped cream.
