News 4 Cooks: Thai Coconut Shrimp

Thai Coconut Shrimp

1 lbs. Shrimp (shelled and deveined)

1/2 c. coconut oil

1/4 c. crushed macadamia nuts (toasted)

2 tsp. fish sauce

1 tbs. minced garlic

2 tbs. minced onion or shallot

1 tbs. spicy crab paste

1/4 c chopped green onion

1 tsp. coconut oil

1 tsp. chopped Thai chili (optional)

1 tbs. chopped basil

*             Over medium heat cook coconut oil, garlic, onions, and chilies for about 5 minutes until soft and onion becomes translucent

*             Add coconut milk and fish sauce and crab paste bring to a boil for 2-3 minutes

*             Add shrimp and cook until just turning opaque, about 3-4 minutes

*             Add basil and green onion, stir

*             Plate and sprinkle with macadamia nuts to serve
