News 4 Cooks: Turkey Hash

Gourmet Girls: Turkey Hash


2 Tablespoons c bacon fat
2 strips of bacon, chopped
1/2  yellow onion, chopped
1/2 c tri colored bell pepper, chopped

2 medium sweet potatoes, peeled, cut into ½-inch cubes

1/2 teaspoon onion powder

1/2 teaspoon garlic powder
Sea salt and ground black pepper (to taste; optional)

1/4 c parsley, fine chopped

1/2  pound leftover turkey med. diced

Preparation Instructions:

1. Heat bacon fat in medium skillet over medium-high heat.
2. Add onion, bell pepper and bacon; cook, stirring frequently, for 4 to 5 minutes, or until  onion are translucent. Set aside.
3. Meanwhile, in a stock pot with 1 gallon of water add potatoes. Bring to a boil and cook for 10 minutes or until potatoes are slightly tender. Drain and add to pepper mix

Add parsley, spices and turkey and brown in skillet.

Serve and enjoy.
