Anchored in Tradition: Babushka Manya's Borscht

- 1/2 lb. Stew meat

- cole slaw mix

- 1/2 lb pre-shredded carrots

- 1 can of shredded beets

- onion

- 2 potatoes

- 1 can tomato paste

- 1 can crushed tomatoes

- hot water

Step 1:

Put stew meat in big pot, pour in just enough water to cover meat, then set to boil

Step 2:

Once water boils, dump meat into strainer and pour out water. Put in new water to fill 2/3 of the pot, put meat back in

Step 3:

Cut 1/2 an onion into tiny pieces, peel potatoes and cut into chunks - then put onions and potatoes into pot - boil 10 minutes on medium/medium-high or until potatoes are soft

Step 4:

Pour in cole slaw cabbage mix, boil 10 more minutes

Step 5:

Add 2 tablespoons of tomato paste, taste...if too sweet, add a tablespoon of lemon juice to set taste,
step 6:

Add can of crushed tomatoes, salt to taste, boil 10 more minutes

Step 7:

Add carrots, boil 5 more minutes

Step 8:

Add beets and beet juice, set to low and stir for a couple minutes, add salt and lemon juice to set taste

Put in bowl, add a dollop of sour cream and enjoy!
