News 4 Cooks - The Dutch Duck Tacos

The Dutch Duck Tacos:

Ingredients for dish (must be specific, no "secret ingredients"):
1lb of duck meat
Tortillas (corn or flour)
5 Brussel sprouts
1 head of frisee lettuce
1 radish
½ cup Cojita Cheese
¼ cup Pickled Red Onions

Orange Vinaigrette
1/3 C Orange Juice
1/4 C White Wine Vinegar
Orange Zest
1 1/2 C Olive Oil

Preparation Instructions (must be specific, no vague amounts i.e. "pinch or scoop"): 
Roast Whole Duck (or poultry of your choice) for a minimum of 3 hours at 375*f
Remove the duck meat
With the duck bones make a stock, reduce 
Combine 1/4 cup of stock for each cup of Duck, simmer until tender

Warm flour tortilla in a pan. 
Top with Cojita Cheese, Duck Meat, Frisee and Brussels Sprout Slaw (see below), Pickled Red Onions and Orange Vinaigrette.  Finish with candied orange peel.
Frisee and Brussels Sprout Slaw
Finely mince Brussels sprouts, Frisee lettuce and radish micro greens
