Py Steakhouse at Casino del Sol: Arizona Burrata

Ingredients for dish (must be specific, no “secret ingredients”):

Candied Tomatoes Recipe:

  •          1 pint heirloom cherry tomatoes
  •          ¼ cup Water
  •          ¼ cup Sugar, granulated
  •          2 Limes, juiced
  •          1 teaspoon minced Garlic
  •          1 teaspoon minced Ginger
  •          1 teaspoon Jalapeno

Preparation Instructions (must be specific, no vague amounts i.e. “pinch or scoop”):

Place all the ingredients into a medium sized pot and allow to simmer while stirring occasionally. Once the tomatoes have been simmering for about ten minutes and are slightly wilted and the sugar has dissolved, remove the pot and allow the tomato mix to cool.

NOTE: You may keep the tomatoes in the liquid or strain and use the liquid to make a dressing.
