News 4 Cooks: Beef Tartare

News 4 Cooks: PY Steakhouse at Casino del Sol

Ingredients:
4 oz small diced, high quality beef
1 t chopped shallot
1 t chopped celery
1 t chopped carrot
1 t parmesan aioli
1 soft egg yolk
1.5 t extra virgin olive oil
.5 t lemon juice
Salt and pepper to taste

Instructions:
Small dice beef, place in bowl.
Add celery, carrots, shallot, olive oil and lemon juice, gently combine. Season with salt and pepper.
Garnish with aioli and egg yolk
Serve with crostinis, toasted bread, crackers, whatever you like!
