Burro Fusso (an Italian butter sauce)

Pasta Water

Bay Leave

Salt

Heirloom Cherry Tomatoes (cut in half)

Marinara

Basil Leaves

Grana Padano or Parmesan Reggiano

1.       Bring 2-3 qts. of salted water to a boil and cook tortelloni for 4-5 mins.

2.       In a separate sauce pan add butter sauce, bay leaves, pasta water, salt and tomatoes. Over a low flame heat the tomato mixture until the tomato are warm, but not cooked.

3.       Add the tortelloni to the tomato mixture and light toss together.

4.       In a serving bowl, place marinara in the bowl. Lay the tortelloni on top of marinara. Then lightly spoon the tomatoes and butter sauce over the tortelloni.

5.       Next tear the basil and place on top of the tortelloni.

6.       Finish by using a micro plane and grate the cheese over the entire dish.

7.       ENJOY!!
