News 4 Cooks: Jumbo Lump Crab Cakes

PY Steakhouse at Casino del Sol:  Jumbo Lump Crab Cakes

1 LB Jumbo Crab Meat

2 LB Special Crab Meat

½ C Mustard-chipotle Aioli (See Recipe)

½ C Plain Aioli OR Mayonnaise

1 ½ C Panko Bread Crumbs

1 C Celery, Diced

Additional Panko For Breading

Instructions:

For Crab cakes:

Mix all ingredients together except for the jumbo crab. Season to taste with salt and pepper. Fold in the jumbo crab and mold to desired size and shape of crab cake. Lightly coat the outside with panko.

MUSTARD CHIPOLTE AIOLI

1 C Plain Aioli OR Mayonnaise

1 teaspoon Mustard Powder

1 t Paprika

2 tablespoon Chipotle in Adobo

2 tablespoon Whole Grain Mustard

2 tablespoon Honey

1 Ea Garlic Clove, Minced

1 teaspoon Horseradish  

For Chipotle: Mix all ingredients together in a mixing bowl and hold.
