News 4 Cooks: Shrimp Quesadilla

Shrimp Quesadilla

16 oz diced yellow onion

8 oz diced jalapeno (deseeded)

6 oz diced Caribe Chile (deseeded)

1 stalk diced celery

38 oz diced roma tomato

12 oz can tomato paste

1 tbsp paprika

1 tbsp cumin

1 tbsp chili powder

1 tbsp mexican oregano

Salt to taste

1 oz vegetable oil

2 pounds small shrimp (cleaned)

16, 5 inch corn tortillas

1 pound jack cheese

  1. Heat oil on med-high heat in medium sized pot. Add onion, celery, jalapeno, and Caribe Chile. Cook until onion and celery soften.
  2. Reduce heat to med low, then add remaining ingredients and let simmer for 15 minutes.
  3. Add shrimp and let simmer for 5 minutes or until shrimp is fully cooked. 
  4. In a sauté pan or griddle set to medium heat add a splash of oil, then put down 3 corn tortillas at a time and put 1 oz of jack cheese, and a scoop of shrimp base including at least 3 shrimp. Cook until crisp, repeat  and enjoy with your favorite salsa.
