Festa International Buffet at Casino del Sol: Kalua Pork Sliders

For the Pork:


3 lb. Pork Butt Roast

2-1/2 tsp. Hawaiian Sea Salt

1-1/2 tsp. Liquid Smoke Flavoring


Pierce pork all over with a carving fork. Rub salt then liquid smoke over meat. Place roast in a slow cooker.

Cover, and cook on Low for 10 to12 hours, turning once during cooking time, until tender and falls apart.

Remove meat from slow cooker, and shred, adding drippings as needed to moisten.

For the Slaw:


¼ lb. Green Cabbage, shredded

7 oz. Canned Crushed Pineapple, drained

3 Tbsp. Red Onion, minced

3 Tbsp. Mayonnaise

2 Tbsp. Apple Cider Vinegar

2-1/2 tsp. Brown Sugar

1 tsp. Fresh Cilantro, fine chop

1/8 tsp. Kosher Salt

1/8 tsp. Ground Black Pepper


Mix cabbage, pineapple, and onion together in a bowl.

Whisk mayonnaise, vinegar, brown sugar, cilantro, salt, and pepper together in a bowl until dressing is smooth. Pour dressing over coleslaw mixture and toss to coat. Refrigerate.

For Sliders:

To serve cut 12 Hawiian Style rolls in half and top with 2 oz. of Pork and 1-1/2 oz. of Slaw.
