News 4 Cooks: Flat Enchilada

Tequila Factory: Flat Enchilada

Gordita                                                           Each         1 

Refried Beans                                                Oz           3

Enchilada Sauce                                            Oz           3

Mexican Cheese                                            Oz           2

Lettuce, shredded                                           Oz           4

Pico de Gallo                                                  Oz           3

Guacamole                                                     Oz           2

Sour Cream                                                    Oz           2

Cabbage, shredded                                        Oz           1

Lime Wedge                                                    Each       1

Jalapeno, charred                                           Each       0.5

Radish, sliced                                                 Each       0.25

For Gordita

1              bag         Maseca

1              Tbs         Baking powder

1              Tsp         Salt

0.5          cup         Cojita Cheese

8              cup         Water

1. In a large bowl, mix all dry ingredients by hand.

2. Add water and mix well by hand.

3. Portion into 6oz balls and flatten in a circle.

4. Place on sheet pan with parchment in between each gordita.

Chile Colorado  

5              Lbs         Beef, stew meat

1                             Oil

1              cup         A/P Flour

1/2         Gallon   Beef Stock

1/2         Gallon   Red Chile Paste

1.  Heat oil in -skillet.

2.  Add stew meat and season.

3.  Brown beef on all sides.

4.  When beef is browned, sprinkle flour over meat.

5.  Stir in flour to make roux and lightly brown roux.

6.  Add beef stock and stir into beef.

7.  Add red chile paste and simmer until beef is tender.                

Method

1. Fry gordita until golden brown and crispy.                                                                                                                       

2. Place beans in center of a round plate.                                                                                                                             

3. Place gordita on beans and top with enchilada sauce.                                                                

4. Top with meat, place meat on top of gordita.                                                                                

5. Top gordita with lettuce, cheese, and pico de gallo
