Gourmet Girls: Blender Hollandaise

2 c  unsalted butter

10 egg yolks

3 Tbsp lemon juice

¼ teaspoon Tabasco

To make blender Hollandaise, melt  unsalted butter. Put egg yolks, lemon juice in a blender, blend on medium to medium high speed for 20-30 seconds, until eggs lighten in color. Turn blender down to lowest setting, slowly dribble in the hot melted butter, while continuing to blend. Taste for salt and acidity and add salt or lemon juice to taste. Transfer it to a container you can use for pouring and set it on a warm – but not  hot – place on or near the stove top.

Bistro Style Eggs Benedict Serves 4

8 soft poached eggs

4 pieces toasted whole grain toast

Grilled shaved ham

Deep Fried Shredded Kale

Hollandaise Sauce (recipe follows)

To assemble:  Place one piece of toast on each plate, top with shaved ham, eggs, kale and sauce.  Enjoy!
