Baked brie with apple compote

Baked Brie with Apple Compote

Ingredients

1 TBS butter (non salted)

2 apples, peeled, cored, and diced about ¼ inch pieces

¼ cup sugar

1/8 tsp cinnamon

dash of nutmeg (optional)

1 egg whipped (egg wash)

1 Brie round (approx 4 ½ inches)

1 sheet of puff pastry

Directions

Preheat oven to 450 degrees

Melt butter in 1 quart pot then add apples, sugar, and spices.  Cook until apples are tender and most of the liquid is gone, set aside to cool

Cut puff pastry in a 10-11 inch circle

Cut Brie round in half and put first half in center of pastry with cut side facing up.  Take half of the apple compote and put on Brie.  Put second half of cut Brie on top of compote with cut side facing down.  Put rest of compote on top of Brie.  Pull pastry up and over the mixture and pinch tightly so it won't melt down when cooking.  Brush all sides of pastry with egg wash.

Place Brie on parchment paper on cookie sheet.  Put in preheated oven on top rack in the center.  Cook 20-25 minutes or until pastry is golden brown.  Can be served with water crackers or crisp bread with a strawberry garnish.
