Shrimp zafiro from Dante's Fire Restaurant

Today we made Shrimp Zafiro from Dante's Fire Restaurant on Let's Make a Meal.

Zafiro Sauce

Ingredients:
Sambal Sauce (Chili Sauce) 1 tbsp.
Sugar 2 tbsp.
Chile Flakes 1 tsp
Egg Yolks 2 each
Cayenne pinch

Preparations:

1. Combine all ingredients in a bowl and mix.

Soy Ponzu

Ingredients:

Soy Sauce ½ cup
Sesame Oil 3 tbsp.
Cayenne Pepper 1 tbsp.
Sugar quarter cup
Limes, juiced 8
Rice Wine Vinegar 2 tbsp.

Preparations:

1. Combine all ingredients in a bowl and mix let sit until sugar dissolve.

Shrimp Zafiro

Ingredients:

Cooked Diced Shrimp 2 cups
Zafiro Sauce ½ cup
Avocado* 1 each
Wonton Chips* 9 each
Candied Lemon Zest* 1 tbsp.
Fried Onions* 2 tbsp.
Sesame Seeds* 1 tsp
Thin Sliced Cucumbers* as needed
Ponzu Sauce* 3 tbsp.
Wasabi Roe* 2 tsp
Seaweed Salad* 4 tbsp.

Preparations:

1. Combine shrimp and zafiro sauce bake at 375 degrees for 15 minutes.
2. Top with garnishes*
