Today we made shrimp with chile gremolata from Gourmet Girls Gluten Free Bakery/Bistro on News 4 Cooks.
Ingredients for shrimp:
2 red Serrano or fresno chiles, with seeds, halved lengthwise
6 garlic cloves, thinly sliced
2 bay leaves
1/2 cup of olive oil
1 1/2 lb shrimp peeled, devained
1 lemon, cut into wedges
1. Heat chiles, garlic, bay leaves and olive oil in a small saucepan over medium heat until it just begins to sizzle. Which should take about 2 minutes.
2. Toss shrimp and chile oil in saute pant, turning halfway through, until shrimp are cooked through. That will take about 8-10 minutes.
Ingredients for Gremolata:
1 red Serrano or fresno chile seeds removed, finely chopped
1 garlic clove, finely grated
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh flat-leaf parsley
1 t. finely grated lemon zest
1 t. olive oil
Kosher salt and freshly ground pepper
1. Mix chile, garlic herbs, zest and oil in a small bowl and season with salt and pepper.
2. Squeeze lemon over shrimp and top with gremolata.
