Shrimp martini from Dante's Fire restaurant

Shrimp Martini
• 12 Medium Shrimp Peeled and Deveined
• 2 cups Truffle Mashed Potatoes
• 3 Martini Garnishes
• ½ cup Vodka
• 3 Martini Glasses
• 1 teaspoon Chopped Chives

Tomato Vinaigrette
• ¾ cup White Balsamic Vinegar
• ½ cup Tomato Juice
• 1 teaspoon Dijon Mustard
• 1 teaspoon Whole Grain Mustard
• 1 teaspoon Honey
• ½ teaspoon Garlic
• ¾ Cup Blended Olive Oil
• 1 teaspoon Shallots
• 1 cup Tomato Concasse

Method:
1. Combine all ingredients except oil in a mixing bowl
2. Slowly whisk in oil

Assembly
• Sautee Shrimp in a Hot Skillet
• Flambé with Vodka
• Scoop Mashed Potatoes into Martini Glasses
• Top with Shrimp
• Drizzle with Tomato Vinaigrette
• Garnish with Martini Garnish
• Sprinkle with Chives
