Half pound of Arborio rice
1 gallon whole milk
1 yellow or white onion cut in half
1 celery stalk
1 pinch each of salt & pepper
1 small shallot finely cut
2 Tbs. olive oil
1 inch stick of butter
1 oz. smoked salmon
Cook rice for 15 min. in a pan with 1 gallon of milk, 1 onion, piece of celery, with salt and pepper.
In another pan, stir fry oil, butter, shallot, and smoked salmon.
Filter the rice and add to the other pan.
Add 1 glass of champagne and a glass of boiled milk.
Cook for 3/4 minutes, stirring frequently, and serve in a dish topped with a spoon of smoked salmon.
