Rackliff Mussels from Gringo Grill and Cantina

TUCSON - In today's Let's Make a Meal, Gringo Grill and Cantina, a brand new restaurant, was featured. The restaurant has Southwestern cuisine with Spanish influences. Today Chef Scott Rackliff made Mussels. The recipe is below.


Mussels

8 mussels
2 Roasted tomatoes
0.5 oz of minced garlic
6 oz of saffron broth
0.25 cilantro
1 oz of butter
0.075 oz of chorizo
1 loaf ciabatta bread
3 oz of white wine

Heat sauce pan, add oil, garlic, chorizo, tomatoes, and mussels. Sauté for 30 seconds. Add the white wine and reduce wine by 3/4 until mussels open. Then add tomato saffron broth, butter and cilantro. Slice ciabatta bread and grill in separate pan with a touch of oil. Remove cooked mussels and place in bowl and follow up by pouring the sauce on top.
