TUCSON - Today on News 4 Cooks, we went Italian! Executive Chef Angel Fabian from Vero Amore stopped by to make Pasta with Pesto and Sausage.
Here's the recipe:
Vero Amore Pasta with Pesto & Sausage
Ingredients
Pesto
1 cup basil (fine chopped)
½ cup walnuts (crushed)
¼ teaspoon white pepper
2 teaspoons Kosher salt
3 ounces EVOO
4 ounces Parmesan (powder)
2 Tablespoons lemon juice (fresh)
1 teaspoon garlic (minced)
Sausage and Pasta
10 ounces pasta (cooked)
1 teaspoon oil
1 sausage (sliced)
2 Tablespoons shaved Parmesan
Steps:
Remove stems from basil and finely chop. Set aside.
Cut walnuts to desired size, preferably small chop. Set aside.
Once all the pesto ingredients have been combined, allow to marinate for approximately 20 minutes. This allows the flavors to develop.
On medium to high heat, put the oil and sausage in a large sauté pan. Sweat the sausage for about a minute before adding your cooked pasta. Once you have added the pasta, continue to cook until the ingredients are hot. Turn flame/heat off then add the pesto. Toss well and place in a large dinner bowl. Finish with fresh shaved Parmesan.
