TUCSON - Today on News 4 Cooks, Angel Fabian from Vero Amore stopped by to show us how to make their signature ravioli dish. Here's the recipe:
Vero Amore Butternut Ravioli with Sage Cream
Executive Chef Angel Fabian
Ingredients:
1 ounce Butter
1 Tablespoon Fresh Sage (sliced)
1 Tablespoon Hazelnut (crushed)
6 ounces Heavy Cream
2 ounces Chicken Stock
¼-teaspoon White Pepper
Pinch Nutmeg (powder)
6 Butternut Ravioli
To Prepare:
Begin by browning the butter in a sauté pan on medium heat.
Add the crushed hazelnut into the pan and roast for roughly 30-seconds.
Add the sliced sage and quickly sauté for 10-seconds.
Pour the chicken stock and heavy cream into the sauté pan and begin to reduce.
Once the cream has come to a boil, add the ravioli and continue to reduce until sauce becomes smooth and velvety.
Place ravioli on a plate and finish with Parmesan. Mangia Bene!
