News 4 Cooks: Turkey Rachel Sandwich

TUCSON - Today on News 4 at Noon, Jack Ahern from Ric's Cafe stopped by to make a slight variation of one the restaurant's signature sandwiches. Here's the recipe:

Turkey Rachel Sandwich

A Rachel sandwich is similar to a Ruben sandwich. A Turkey Rachel is simply made with Turkey Breast & Coleslaw vs Corned Beef & Sauerkraut.

Ingredients (1 serving)
1 (6 oz) thinly sliced smoked turkey breast
2 slices marble or jewish rye bread
2 tablespoons thousand island dressing
2 thin slices swiss cheese
1/4 cup coleslaw
Salt and freshly ground black pepper
1. Heat a griddle or large skillet over medium-high heat. Layer turkey slices w/coleslaw on griddle and let cook for 1 minute or until hot.
2. Butter one side of 1 slice of bread and place on heated griddle. Spread with Thousand Island dressing; top with cheese. Butter one side of remaining slice of bread and place buttered-side down on heated griddle; top with cheese. Turn turkey and top with coleslaw. Cook until turkey and bread until cheese is melted, ~2 to 3 minutes. Sandwich turkey and coleslaw between bread. Slice and serve immediately.
