News 4 Cooks: Taco Salad with Pork Carnitas

TUCSON - Today on News 4 Cooks at Noon, Jack Ahern from Ric's Café stopped by with a delicious Taco Salad dish. Here's the recipe:

Taco Salad with Pork Carnitas

*4 c Shredded Pork
1/2 c Diced Fresh Chilies'
1/2 c Diced Red Onion
1 c Diced Tomato
1 c Diced Black Beans
1 c Corn (Fresh Kernel Corn)
1/3 c Chopped Cilantro
1/2 c Sour Cream
4 Large Flour Tortillas
1 Large Head of Ice Berg Lettuce

Deep fry or bake flour tortillas in the shape of a basket. Place chopped lettuce in shells. Combine corn, onions, black beans & cilantro. Season with salt & pepper to taste. Sprinkle on top of lettuce & top with pork carnitas. Garnish with a tablespoon of sour cream.

*Slow cooked, spicy, shredded pork shoulder, finished in the oven for browning.
