TUCSON - Today on News 4 Cooks at Noon, Chef Daniel Mangione from the Core Restaurant at The Ritz-Carlton, Dove Mountain stopped by to make strawberry shortcake.
Here's the recipe:
Strawberry Shortcake
Yields 6 portions
Description: Late Summer Strawberry Shortcake, Lemon Mascarpone Cream Filling
Brown Sugar Strawberry Salad
Shortcake Biscuit:
AP flour 2 cups
White Sugar 2 tablespoons
Baking Powder 2 teaspoons
Black Pepper 1 teaspoon
Cream 1 1/2 cups
Butter 3 Tabelspoon
< Cut in butter to dry items with mixer
< add cream and mix to combine
< roll on surface and cut into 2 inch round biscuits
< bake at 350 for 14 minutes
Lemon Mascarpone Filling
Mascarpone Cheese 1 Pound
White Sugar 4 ounce
Lemon Zest 1 fresh
< blend items together and set aside
Brown Sugar Strawberry Salad
Fresh Strawberry 1 pint
Brown Sugar 2 ounces
Vanilla Extract 1 Tablespoon
Salt 1 teaspoon
< wash and remove stems from strawberry
< cut strawberry in quartes, combine with above items
< set salad aside for 30 minutes to develop flavor
