TUCSON - Today on News 4 Cooks at Noon, Executive Chef Mark Muscoreil from Vero Amore stopped by to make Pasta Pomodoro Amore with Chicken.
Here's the recipe:
Pasta Pomodoro Amore with Chicken
6 oz diced, grilled chicken
9 oz cooked bowtie pasta
6 oz Pomodoro sauce (chopped tomatoes, fresh basil, chopped garlic, salt, pepper, EVOO)
¼-teaspoon chopped garlic
Sprinkle of salt, pepper, and granulated garlic
Pinch of dried basil and oregano
Pinch of red pepper flakes
Splash of olive oil
3 oz white wine
4 oz San Marzano tomato juice
Handful of shredded Parmesan cheese
In a sauté pan, combine olive oil, chicken, salt, pepper, granulated garlic, basil, oregano and red pepper flakes. Sauté until garlic "pops" or sizzles. Add white wine and cook off the alcohol. Add Pomodoro sauce and San Marzano tomato juice and continue cooking until reduced. Add cooked bowtie pasta and toss thoroughly. Place in serving bowl. Garnish with Parmesan cheese and serve.
