TUCSON - Today on "News 4 Cooks!" at Noon, Jack Ahern from Ric's Cafe stopped by with a delicious pasta dish. Here's the recipe:
Mediterranean Pasta with Salmon
8 oz dried Fettuccini Pasta
1 small can of Artichokes (quartered)
2-3 Med size Tomatos (diced)
3-4 Fresh cloves of Garlic (Chopped)
3/4 c Sliced Green Olives w/pimento
1/2 to 3/4 c Olive oil
1/3 c White wine
Feta Cheese (crumbled)
16 ounces Fresh Salmon Filets (Cubed)
Heat about half the oil in a large skillet, When hot add the garlic, Salmon, let cook until the Salmon turns a lighter pink in color.
This should take about 3 to 4 minutes. Add the White Wine, let cook for about 2 min add all the other ingredients except the Feta cheese and fettuccini
Place hot pasta in serving bowls and spoon mixture over the top. Garnish w/ Feta cheese. This Recipe serves 4 people.
