TUCSON - Today on News 4 Cooks, Jack Ahern from Ric's Café on the east side stopped by to make a quiche - but with a taste of chile relleno! Here's the recipe:
Chile Relleno Quiches
1 med Yellow Onion (diced)
2 to 3 cups Shredded 3cheese
2 28 oz cans of Green Chilis
3 c Milk
8 eggs beaten
Salt & Pepper to taste
1 Pkg of Puff Pastry
Mix eggs and milk set aside. Put puff pastry in pie pan. Layer whole green chilies, onions, cheddar cheese until pie pan is filled. Pour egg mixture over pie pan. Bake at 350 degrees until set - about 1 hour and 1/2. When it gets lightly brown, cover with wax paper and foil. Finish baking until set. Serves 6 people. Can be served with fruit, cole slaw, or cottage cheese.
