News 4 Cooks: Camaron Empanizado

TUCSON - Today on News 4 Cooks at Noon, Chef David Matias from Mosaic Café stopped by to make Camaron Empanizado, or Mexican Breaded Shrimp. Here's the recipe:

Camaron Empanizado
Mexican Breaded Shrimp

12 jumbo shrimp, peeled and deveined
1 cup of flour
3 eggs, whisked
4 cups of bread crumbs
Salt, pepper, and Mexican oregano, to taste
Vegetable Oil for frying

Season shrimp with salt, pepper and Mexican oregano.
Coat seasoned shrimp in flour and then shake excess off.
Dip floured shrimp into eggs then coat in bread crumbs.

Fry in a medium frying pan over medium heat and allow to cook for 2-3 minutes on each side.

Serve with fresh lemon wedges and Mexican calabacitas.
