News 4 Cooks: Blanco's Guacamole

TUCSON - Today on News 4 Cooks at Noon, Chef Eddie Coronado from Blanco Tacos + Tequila stopped by with the recipe for their guacamole dip. Here it is:

Guacamole
Ingredients:
Avocados 2 ea
Roasted Anaheim Pepper (1/8" dice) 1 tsp
Roasted Poblano (1/8" dice) 1 tsp
Roasted Jalapeno (1/8" dice) 1 tsp
Caramelized Onion (1/4" dice) 1 tbsp
Garlic Minced 1 tsp
House Salsa 1 tbsp
Salt 1 tsp
Pepper 1 pinch
Sour Cream 1 tbsp
Lime Juice 1 tbsp
Pico de Gallo 1 tbsp
Cilantro (chopped) 1 tbsp
Green Onion (1/16" sliced) 1 tbsp
Pico de Gallo 1 tbsp
Cotija 1 tbsp
Procedures:
1. Mash avocadoes with a spoon.
2. Add all ingredients except 1 tbsp of Pico, green onion and cotija, mix together well.
3. Place into a bowl and garnish with remaining pico, green onion and cotija.
