TUCSON - Today on News 4 Cooks at Noon, Chef Patrick Johnson from Brio Tuscan Grille stopped by to make Beef & Shrimp Scampi. Here's the recipe:
Beef and Shrimp Scampi
3- 2oz filets
olive oil as needed for steaks
1-2 Tbs. EVOO for shrimp
5 (31-40 ct per lb.) shrimp
1 tsp Cajun Seasoning
2 oz Roasted Garlic Sauce
1 TBSP Spicy Gastrique
1 Melon Ball of Butter (Unsalted)
1 Pinch (in sauce) Salt and Pepper mix
2 oz Sliced Asparagus
2 oz Zucchini
2 oz Grape Tomatoes, halved
1/4 tsp Thyme
2 TBSP Pepper Relish
1/2 oz Lemon Vinaigrette
Salt and Pepper
Dredge top and bottom of steak with seasoning then dip in oil
Place on grill and cook to desired temp
Season shrimp with cajun seasoning
Heat 1/2 oz of oil in a saute pan. Add shrimp and saute until done
In a hot saute pan, add roasted garlic sauce, gastrique, and whole butter and salt and pepper
In a non stick saute pan, heat 1/2 oz oil.
Add asparagus, zucchini, thyme, and tomatoes, then saute.
Add orzo to heat, add lemon vinairette pepper relish, and salt and pepper.
Place heated orzo set on plate
Place beef under the orzo set
Place shrimp on top of beef
Pour sauce over shrimp and down the plate
Garnish with pesto bread crumbs and parsley.
