TUCSON - Today on News 4 Cooks at Noon, Nicholas Bamford is from "Gusto Osteria" on the east side stopped by to make a salad with an apple reduction as a vinaigrette dressing. Here's the recipe for the apple reduction and the Apple Bacon Vinaigrette:
1qt. Apple juice
In a sauce pan add the juice and sugar together. Stir until sugar dissolves. Bring to a boil then reduce heat to medium. Continue to simmer until liquid has been reduced by half. Let cool before the next step.
Apple Bacon Vinaigrette
1¼c. Apple reduction
2Tbs. Minced shallots
1c. White balsamic vinegar
2c. Canola oil
Once bacon grease and apple reduction are cooled, you're going to need a blender. Pour the bacon grease and canola oil into a one quart measuring cup and stir vigorously. Place the reduction, white balsamic, minced shallots, and a dash of salt and pepper in blender then turn on high. While blending slowly pour in the bacon oil. Once all the oil is incorporated turn off blender and store in a container.
