Linguine Alla Carbonara


1/2 cup Onion diced
1 Tbs Minced Garlic
2 Tbs Butter
4 oz. Diced Prosciutto or Pancetta
¼ cup Dry White Wine (Kief-Joshua Vineyards 2011Cephus or 2011 Pinot Gris)
½ cup fresh peas (or frozen)
Salt and Pepper to taste
1 lbs Linguine
1 Tbs parsley to garnish

1. Melt 1 Tbs butter over medium heat

2. Saute onions and garlic until soft; about 5-7 min

3. Add wine, peas and prosciutto or pancetta and sauté for 3-5 min till hot

4. Add heavy cream and bring to a boil

5. Melt in remaining butter

6. Then add cooked Linguine (follow directions on package) to the pan stir and serve

7. Garnish with chopped parsley
