TUCSON - Today on Let's Make a Meal, Chef Benjamin Callender from Brio Tuscan Grille stopped by with a great summer salad, and a cool fruit drink to go along with it. Here are the recipes:
Strawberry Balsamic Chicken Salad
1 1/2 oz. Romaine Chopped
1 1/2 oz. Iceberg Chopped
2 oz. Spring/Mesculin Mix
1 oz. Tuscan Italian Dressing
2 oz. Balsamic Vinaigrette
2 Tbsp. Candied Pecans
2 Tbsp. Gorgonzola Cheese
2 oz. Red Grapes (halved)
Pinch of Salt and Pepper
4 oz. Shaved Chicken
3 oz. Strawberries (1/4" Sliced Halved)
In a mixing bowl place lettuces, Tuscan Italian dressing, 1 oz Balsamic Vinaigrette, 1 Tbsp pecans, 1 Tbsp Gorgonzola cheese, grapes, salt and pepper, then toss.
In a mixing bowl place chicken, strawberries and 1 oz of Balsamic Vinaigrette, and mix.
Place on top of salad
Garnish with 1 Tbsp pecans and 1 Tbsp Gorgonzola cheese.
Strawberry Basil Limonata
1/2 oz. Simple Syrup
2 Basil Leaves
10 Strawberry slices
A few ice cubes to crush
4oz. Lemonade and 1/2 oz. Fresh Lime Juice Shake and Strain over ice into glass Float 1 oz of soda Garnish with 2 strawberry slices and 1 lime wheel
