Let's Make a Meal: Shrimp Scampi for Two Plus

TUCSON - Today, Jonathan Landeen landed from Jonathan's Cork stopped by the News 4 Tucson studios to show us how to make a delicious shrimp scampi. Here's the recipe:

Shrimp Scampi for Two Plus

1 lb 16-20 shrimp
1 tsp olive oil
1 tbs chopped shallots
1 tsp minced garlic
½ tbs lemon juice
¼ c white wine
Pinch of salt and pepper
1 ½ sticks or 6 oz of cold chopped unsalted butter
1 tbs of chopped parsley

In a medium skillet place olive oil, shallots and shrimp. Add heat and sautee one minute on medium high. Add garlic and toss 30 seconds keeping all ingredients moving. Add lemon juice and white wine, allow to simmer turning shrimp to finish cooking on both sides. Add salt and pepper and reduce liquid to one to two tablespoons. Incorporate pieces of butter all at once and stir over medium heat till butter is almost entirely melted. Then sprinkle chopped parsley. This should have a cream like consistency. Serve over rice or pasta.

Cilantro Pesto
2 cups loosely packed fresh cilantro
1/3 c pine nuts
2 medium garlic cloves, peeled
½ c grated parmesan cheese
½ cup extra virgin olive oil
Salt and pepper to taste

Combine all ingredients except for olive oil and salt and pepper in food processor. Blend together until it forms a smooth paste. Scrape the sides of the processor and process again slowly adding the olive oil. Add the salt and pepper to taste.
