Let's Make a Meal: Quinoa Salad with Shrimp, Kid-Style!

TUCSON - Today on "Let's Make a Meal," News 4's Martha Vazquez was joined by a couple of budding Food Network stars, youngsters Haile and Nia Thomas.

The two have their own cooking show online, titled "Kids Can Cook," and they have received numerous awards for their work in helping kids eat healthier.

Today, they prepared a Quinoa Salad with Shrimp - healthy, east, and delicious, no matter what your age!

Thai Basil & Lemon Pepper Shrimp with Black Bean & Corn, Quinoa Salad

?2 cans organic black beans (rinsed)
2 cups fresh corn
?1 medium red onion (chopped)
?1 bunch cilantro
3 cups cooked organic quinoa
2 cups cherry tomatoes (quartered)
?Thai Basil
?1-2 Lemons
?Sea Salt
?4 Cloves Garlic
?6 cups chicken or vegetable stock
Olive Oil
1 pound large shrimp (shelled & cleaned)

Directions Quinoa Salad: Cook quinoa according to package directions substituting chicken or vegetable stock for water and set aside. Heat Olive Oil, sauté ½ chopped onions and 2 garlic cloves (minced) for about 1minute, add corn and sauté an additional minute. Add black beans, and then tomatoes, mix well then add cooked quinoa. Mix all ingredients, season with salt to taste, add fresh chopped cilantro and serve.
Thai Basil Shrimp: Heat olive oil, sauté remaining ½ chopped onions and 2 garlic cloves (minced), for about 1 minute. Add shrimp, season with sea salt, pepper, paprika and lemon juice. Finish with cilantro and Thai basil.
