TUCSON - Today on "Let's Make a Meal," Benjamin Callendar from Brio Tuscan Grille stopped by with one last pasta dish to round out the week. Here's the recipe:
Pasta Ala Vodka
Noodles of choice
1/2 oz. olive oil
1/2 Tbsp Sliced Garlic
1/4 tsp Crushed Red Pepper
1 oz Vodka
3 oz. Marinara Sauce
3 oz Parmesan Cream
2 melon balls of Mascarpone Cheese
1 pinch of Salt and Pepper
1/4 oz Crispy Pancetta
1/2 Tbsp Basil Julienned
Cook noodles in boiling water
Heat oil in saute pan
Add garlic and saute until lightly toasted
Add crushed red pepper, saute
Add vodka and flambe
Add marinara and parmesan cream
Stir to combine
Drain noodles and add to pan with mascarpone, toss to combine
Season with salt and pepper
Reduce for 15 seconds
Place in pasta bowl
Garnish with crispy pancetta and basil
