TUCSON - Today on "Let's Make a Meal," Jonathan Landeen from Jonathan's Cork stopped by the kitchen today to make a Jalapeno Cheese Shrimp Bake. Here's the recipe:
Jalapeno Cheese Shrimp Bake
Makes 4-6 servings
24 16/20 peeled, deveined and grilled shrimp
3 peeled and seeded chopped Roma tomatoes
4 peeled green chilies pureed
4 peeled green chilies chopped
1 tsp shrimp base
½ c white wine
2 c heavy cream
1 ½ c pepper jack cheese
1 tbs raw roux
Place white wine, pureed chilies, chopped tomato and shrimp base in skillet, reduce. Thicken with a tbs of roux. Add pepper jack cheese and shrimp. Bake 400 degrees with cheese on top until browned. Pre grill shrimp
