TUCSON - Today on "Let's Make a Meal," Steve Sargent from Mr. K's Barbeque stopped by to make:
Green Chili Cornbread
8oz unsalted butter (softened)
1 cup sugar
16 oz creamed corn
3 oz roasted & diced green chilies
16 oz shredded cheese
1 cup yellow cornmeal
1 cup AP flour
2 Tb baking powder
1/2 ts salt
Cream butter and sugar
Add eggs 1 at a time
Add creamed corn, chilis, & cheese
Combine dry ingredients, then add to mixture
Mix until just combined (do not over mix)
Convection oven: 20-25 minutes @ 350
Conventional oven: 25-30 minutes @ 375
