Let's Make a Meal: Gluten-Friendly Pasta Primavera from Brio

TUCSON - Today on "Let's Make a Meal," Chef Benjamin Callendar from Brio Tuscan Grille stopped by with a delicious gluten-free dish. Here's the recipe:

Gluten-Friendly Pasta Primavera

1 oz olive oil
2 oz. mushrooms
1/2 tsp chopped garlic
2 oz diced roma tomatoes
3 oz vegetable bercy
2 melon butter balls
1 TBSP Feta
1 TBSP Feta on top
pinch of salt and pepper
1 oz fresh spinach
7 oz gluten free pasta


Heat oil in a saute pan
Add mushrooms, saute
Add garlic and saute
Add tomatoes, bercy butter and 1 TBSP feta
Season with salt and pepper
Heat Pasta in boiling water
Drain and add into saute pan
Add spinach-making sure not to over cook. Toss to combine
Place in pasta bowl, tower the center
